:Ingredients

1 kilo (cut for medium size pieces)

Couscous: half a kilo

onions: 2 tablets (sliced) 

Tomato: 2 tablets (diced) 

Parsley: bugnch Carrots: half a kilo (cut into large pieces) 

Turnip: half a kilo Cabbage: a quarter of a grain (small)

Zucchini: 4 pieces Pumpkin: half a kilo

Chickpeas: can (boiled and drained)

Hot red pepper 

Olive oil: half a cup

Salt: a teaspoon Black pepper: a small spoon

Ginger powder: a teaspoon 

Turmeric: 1 teaspoon 

Saffron: 1/4

teaspoon (dissolved i water/ optional) 

Water: 4 cups (boiled) 

Onions: 3 grains (slices, amounts of the apple) 

Butter: a tablespoon (or vegetable oil, apple ingredients)


Dried grapes: half a cup (washed and soaked in cold water for a quarter of an hour)

Black pepper: a quarter of a teaspoon

Salt: half a teaspoon

 

Ginger: half a teaspoon

 

Cinnamon: half a teaspoon

 

Sugar: a quarter of a teaspoon 

The method

We saut the onions in the oil then add the meat and spices stir well and add the tomatoes then the boiling water and cover the saucepan for 1-2 hours then add the carrots turnips and cabbage


At the same time bring the couscous grains by sprinkling two cups of cold water with mixing then pouring a quarter cup of olive oil


After the steam rises from the couscous cooker add the couscous and let it evaporate for 1/4 hour


Lift the pot from above the fire and sprinkle the couscous with two cups of cold water a teaspoon of salt and a tablespoon of olive oil and add the rest of the vegetables in the saucepan then the couscous and let it evaporate for another quarter of an hour


Meanwhile saute the onions in oil or butter, or a mixture of both, then add the spices and leave the onions over a low heat for 1/4 hour Then add the raisins and continue stirring until the onion turns golden Couscous is served in a large plate with the addition of meat sauce vegetables and onions

Two eggplants


Two tomatoes, chopped


Two cloves of garlic, minced


A small spoon of ground cumin


1 teaspoon paprika


Teaspoon salt


A teaspoon of chili powder to taste


3 tablespoons of olive oil


Juice of half a lemon


frying oil


Two tablespoons of chopped green coriander


:The method

Peel the eggplant and cut it into circles (the thickness of the circle does not exceed 2 cm). Put an appropriate amount of oil for frying in a deep frying pan and put it on the stove until it gets hot well, then fry the circles of the eggplant until they are golden in color. After that, remove the eggplant circles and put them on paper to remove the excess oil


After you finish frying the eggplant circles, set them aside, and bring another frying pan or saucepan, heat the olive oil, then put the tomatoes, garlic, cumin, paprika, salt, hot pepper to taste and lemon juice, stir well until the sauce forms. Then add the fried eggplant circles and mix them with the tomato sauce and use the fork to break up the eggplant circles and combine them well with the tomatoes


Add the chopped coriander and remove the upset from the heat. Put it in a serving dish and garnish with a slice of lemon. Serve the eggplant Moroccan style hot or cold
