Ingredients
1kg meat 
10big onions 
(spices(salt,ginger,turmeric,cinnamon,black pepper,saffrom
olive oil
dried grapes
almonds
dried plums
sesame

 The way of the meat
We add spices to the meat and add a cup of water and half a cup of olive oil ,leave it in the refrigerator for a minimum of two hours ,in the meantime we cut the onions into small squares. Afterthe two  hours have passed put the oil in the tajine or tefal pot and add a layer of onions on it,then put the meat and add the rest of the onion until the meat is covereddo not add water never leave it until the meat is soft and add dried grapes on top when the onions are thawed, we know that they are fully cooked 

The way of the dried plum
We take a pot in which we put the dried plums after washing them, then coverwith water and leave them over the fire to boil.After that  add the desired amount of suger, cinnamona, little salt and orange blossomm water .Leave it until the water disappears and only a little remains and put sesame on top as shown in the image above.And it is ready

The whale tagine or the fish tagine is one of the dishes that Moroccan cuisine is particularly famous for which is frequently prepared in the blessed month of Ramadan and is prepared in a special traditional dish that gives a distinctive flavor to the food cooked in it and this dish is characterized by the abundance ofspices and spices used in its preparation such as cumin and cinnamon in addition to vegetables and in this article we will

Ingredients
 1kg of whole fish
Three medium sized potatoes
Three round carrots cut into slices
Two grains of sweet green pepper
Two grains of sweet red pepper
A grain of strawberry, medium in size

Charmoula dressing
Juice of half a lemon
Half a cup of olive oil
Two tablespoons of parsley, finely chopped
2 tablespoons of green coriander, finely chopped
Six cloves of garlic, crushed finely
2 teaspoons ground cumin
Two teaspoons of sweet paprika
Half a teaspoon of ground black pepper, or to taste
Two teaspoons of salt, or to taste

The method 
Wash the fish well with water, and dry it well 
Chop potatoes, carrots, tomatoes, green and red peppers into large pieces, according to taste and desire 
Pour the vegetables into an oven tray Put all of: lemon juice, parsley, olive oil, coriander, garlic, cumin, paprika, black pepper and salt in a large bowl mixing all ingredients well
Grease the fish inside and outside with the mixture of ingredients using a kitchen brush and spread the vegetables with the same mixture 
Put the fish in an oven tray with the vegetables 
Poured a third of a cup of water into the tray until the sauce thickens 
Cover the tagine tray with tin foil and put it in the oven for cooking 
Leave the tray in the oven for forty-five minutes, until it is fully cooked Take the fish out of the oven after the specified time has passed and serve it with vegetables and sauce

Couscous is Moroccan food that is well known to all Moroccans, large and small, as no home is without it on Friday in a family atmosphere full of couscous joy. Now I leave you with the ingredients and the way to prepare this wonderful and very rich meal this quantity is enough for ten people


:Ingredients

1 kilo (cut for medium size pieces)

Couscous: half a kilo

onions: 2 tablets (sliced) 

Tomato: 2 tablets (diced) 

Parsley: bugnch Carrots: half a kilo (cut into large pieces) 

Turnip: half a kilo Cabbage: a quarter of a grain (small)

Zucchini: 4 pieces Pumpkin: half a kilo

Chickpeas: can (boiled and drained)

Hot red pepper 

Olive oil: half a cup

Salt: a teaspoon Black pepper: a small spoon

Ginger powder: a teaspoon 

Turmeric: 1 teaspoon 

Saffron: 1/4

teaspoon (dissolved i water/ optional) 

Water: 4 cups (boiled) 

Onions: 3 grains (slices, amounts of the apple) 

Butter: a tablespoon (or vegetable oil, apple ingredients)


Dried grapes: half a cup (washed and soaked in cold water for a quarter of an hour)

Tfaya Ingredients 

Black pepper: a quarter of a teaspoon

Salt: half a teaspoon

 

Ginger: half a teaspoon

 

Cinnamon: half a teaspoon

 

Sugar: a quarter of a teaspoon 

The method

We saut the onions in the oil then add the meat and spices stir well and add the tomatoes then the boiling water and cover the saucepan for 1-2 hours then add the carrots turnips and cabbage


At the same time bring the couscous grains by sprinkling two cups of cold water with mixing then pouring a quarter cup of olive oil


After the steam rises from the couscous cooker add the couscous and let it evaporate for 1/4 hour


Lift the pot from above the fire and sprinkle the couscous with two cups of cold water a teaspoon of salt and a tablespoon of olive oil and add the rest of the vegetables in the saucepan then the couscous and let it evaporate for another quarter of an hour


Meanwhile saute the onions in oil or butter, or a mixture of both, then add the spices and leave the onions over a low heat for 1/4 hour Then add the raisins and continue stirring until the onion turns golden Couscous is served in a large plate with the addition of meat sauce vegetables and onions

Two eggplants


Two tomatoes, chopped


Two cloves of garlic, minced


A small spoon of ground cumin


1 teaspoon paprika


Teaspoon salt


A teaspoon of chili powder to taste

Juice of half a lemon


frying oil


Two tablespoons of chopped green coriander


:The method

Peel the eggplant and cut it into circles (the thickness of the circle does not exceed 2 cm). Put an appropriate amount of oil for frying in a deep frying pan and put it on the stove until it gets hot well, then fry the circles of the eggplant until they are golden in color. After that, remove the eggplant circles and put them on paper to remove the excess oil


After you finish frying the eggplant circles, set them aside, and bring another frying pan or saucepan, heat the olive oil, then put the tomatoes, garlic, cumin, paprika, salt, hot pepper to taste and lemon juice, stir well until the sauce forms. Then add the fried eggplant circles and mix them with the tomato sauce and use the fork to break up the eggplant circles and combine them well with the tomatoes

 Ingredients


Two kilograms of honey



Half a kilogram of ground sugar


frying oil


A teaspoon of ground cinnamon


A kilogram of almonds


Half a cup of blossom water


Two hundred grams of butter


Two tablespoons of flour dissolved in a cup of water


A kilogram of pastilla paper


:The method
Peel the almonds, wash them, dry them with a tissue, mix them with blossom water and sugar, and grind them


 Add the butter and cinnamon to the previous mixture and mix it well and re-grind the mixture again on the meat grinder twice


Knead the mixture well, and form small balls from it


Dot the simple sheet into medium sized rectangles


We mix two tablespoons of flour with half a cup of water in a bowl until we have a dough with a liquid consistency


Place the small almond ball on the edge of the rectangle, flatten it slightly and fold it over itself to get a triangular shape


The end of the last hem of the briwat is affixed, by dipping a feather in the water and flour


When you have finished making all the brioat, fry it in hot abundant oil, and when it turns brown on both sides, remove it from the oil, drain a little oil, and dip it hot in honey
